Ginger cookies

i brought these to the Eastern Gathering and they were a hit!

4 1/2 cups a/p flour
4 teaspoons ground ginger
2 tsp baking soda (may be omitted for a P/c cookie)
1 1/2 tsp ground cinnamon
1 teaspoon ground cloves
1/4 tsp salt
1 1/2 cups butter
2 c. Sugar
2 eggs
1/2 c. Molasses
3/4 c. Sugar

Stir dry ingredients in a bowl except sugar.

In large bowl beat butter until creamy then add 2 cups of sugar. Mix until creamy. Beat in eggs and molasses. Then a little of the dry mixture at a time until all mixed. Roll into 1" balls then roll in sugar. Place 1 1/2" apart on a baking sheet and bake 11-13 minutes at 350 degrees. Makes about 120 cookies.

Note: for more bite add more ginger. If using fresh grated ginger use more than recipe calls for.
